Instructions

Step 1:

  • 1. peel and chop the butternut squash into cubes
  • Step 2:

  • 2. peel and chop the onion
  • Step 3:

  • 3. chop the red pepper
  • Step 4:

  • 4. put all 3 ingredients into a biggish pan
  • Step 5:

  • 5. boil the kettle and pour hot water into a jug
  • Step 6:

  • 6. mix in the stock cubes and sprinkle as much chili powder as desired (salt and pepper to season)
  • Step 7:

  • 7. pour into the pan of ingredients and bring to boil
  • Step 8:

  • 8. let it simmer for about half an hour on a medium heat (or until butternut squash is soft)
  • Step 9:

  • 9. using a hand held blender, mix together to form a smooth thickish soup
  • Step 10:

  • 10. Enjoy!
