Step 1: 1. place the cous cous in a bowl and cover it with boiling water.
Step 2: 2.Drizzle over a little oil to stop it sticking. Cover with cling film and place in the microwave for 2 minutes.
Step 3: 3. When the microwave beeps remove the bowl and shake it hard to separate the cous cous as it will have clumped together.
Step 4: 4. add a little more oil as well as 2 tablespoons of tomato purée, half a teaspoon of garlic purée, 5 finely chopped sun dried tomatoes, salt and pepper, parsley and about a quarter of a teaspoon of chilli flakes (less if you like it mild, more if you like it hot).
Step 5: 5. fork the other ingredients through the cous cous.
Step 6: 6. Serve and enjoy!
