Step 1:

  • 1. place the cous cous in a bowl and cover it with boiling water.
  • Step 2:

  • 2.Drizzle over a little oil to stop it sticking. Cover with cling film and place in the microwave for 2 minutes.
  • Step 3:

  • 3. When the microwave beeps remove the bowl and shake it hard to separate the cous cous as it will have clumped together.
  • Step 4:

  • 4. add a little more oil as well as 2 tablespoons of tomato purée, half a teaspoon of garlic purée, 5 finely chopped sun dried tomatoes, salt and pepper, parsley and about a quarter of a teaspoon of chilli flakes (less if you like it mild, more if you like it hot).
  • Step 5:

  • 5. fork the other ingredients through the cous cous.
  • Step 6:

  • 6. Serve and enjoy!
