Spicy Sweet Carrot Rice Medley!

Only just made this to use up some fridge dregs, it turned out well.

Ingredients
- 1. Rice, 2 cups (when dry)
- 2. Water, 4 cups (if you are using pressure cooker, like i did then use 2 1/2 cups of water.)
- 3. Tomatoes, 2 chopped into bits.
- 4. 3-4 garlic cloves finely chopped
- 5. A smallish chunk of ginger finely chopped
- 6. Fresh green chillies to taste, i used half a teaspoon of minced chilli from a jar.
- 7. 3 carrots grated
- 8. Green pepper, or any veggie that might need using!
- 9. Tin of kidney beans, optional, but i needed to use it up!
- 10. Good squirt of ketchup (trust me :p)
- 11. Coriander leaves chopped up (optional)
- dry spices:
- 1. Garam masala, coriander and cumin powders to your taste (i just shovel it in randomly, they are only mild.)
- 2. Turmeric, a pinch
- 3. Red chilli, to taste
- these spices are optional, you can add any!
Instructions
1. Heat oil in a pan, add green chilli, ginger and garlic and cook for a minute if that.
2. Add all veggies (carrot, tomato, peppers) and stir it about until tomatoes go softish.
3. Add in dry spices and ketchup and coat everything well and cook for another minute or 2.
4. Add rice and coat it with veggies, then pour in water.
5. Add water and cook until water disappears and rice is cooked to your liking.
6. Stir kidney beans and coriander leaves (if using) into rice when it’s almost done and let them get warm and stuff.
if using pressure cooker, cook rice for 4-5 minutes once pressure is reached then turn the heat off and let it cool until the lid unlocks. Then stir in kidney beans once lid is lifted.
i do like it when an experiment comes together.
