Split Beans Masala Curry

A simple vegetable curry with beans, potato and cauliflower in a thick and spicy tomato curry base

Ingredients
- 1 cup rajma beans, soaked and shelled
- 1 cup potato cubes
- 5 big cauliflower pieces
- 3 tomatoes, pureed into a paste
- 1 large onion, grinded to paste
- 1 tsp ginger and garlic paste
- 4 green chillies, diced
- 4 dry red chillies
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- a pinch of jeera powder
- 1 tbsp mustard oil
- salt to taste
- 1 bay leaf
Instructions
Heat oil in a pressure cooker on medium flame, add the red chillies and onion paste and saute for three minutes. Add the diced chillies, saute for 1 minute. Add the ginger garlic paste and the turmeric powder. Mix well and saute again for 1 more minute. Add the tomato paste. Mix well. Let it cook for two minutes. Add one bay leaf, the split beans, potatoes and cauliflower. Mix well. Add the red chilli powder and the jeera powder. Mix everything well. Add water just till the level of the ingredients in the cooker. Add salt. Put the whistle on and let it pressure cook for ten minutes. After that open the lid and let it cook some more time, say 5 minute till the gravy becomes thick. Check if salt is adequate. Serve hot with rice or roti.
