Step 1:

  • Preheat oven to GasMark 6
  • Step 2:

  • wrap pepper in in foil with a little oil in it
  • Step 3:

  • Par boil the cubed potatoes for 5-8 mins
  • Step 4:

  • drain and season with salt and pepper and mixed herbs
  • Step 5:

  • add to a small roasting tray the potatoes with a tsp of oil
  • Step 6:

  • fry leeks and garlic gentle for 5 mins in oil
  • Step 7:

  • Add courgette cubes and broccoli
  • Step 8:

  • stir fry gently then add mushrooms
  • Step 9:

  • check on the roasting pepper, when sides are browning fill with fried vegetables mixed with grated cheese and recover with foil, replace in oven.
  • Step 10:

  • when potatoes start browning, cook for 5 further minutes
  • Step 11:

  • serve immediately and enjoy immensely 🙂
