Step 1:
Preheat oven to GasMark 6 Step 2:
wrap pepper in in foil with a little oil in it Step 3:
Par boil the cubed potatoes for 5-8 mins Step 4:
drain and season with salt and pepper and mixed herbs Step 5:
add to a small roasting tray the potatoes with a tsp of oil Step 6:
fry leeks and garlic gentle for 5 mins in oil Step 7:
Add courgette cubes and broccoli Step 8:
stir fry gently then add mushrooms Step 9:
check on the roasting pepper, when sides are browning fill with fried vegetables mixed with grated cheese and recover with foil, replace in oven. Step 10:
when potatoes start browning, cook for 5 further minutes Step 11:
serve immediately and enjoy immensely 🙂
