PREP 0 min COOK 0 min TOTAL 0 min YIELD 0 JUMP TO RECIPE SHARE Share on Facebook Share on Flipboard Share on Pinterest Share via Email Ingredients-1 aubergine per person-diced green beans-diced mushrooms-a drop of BBQ marinade (optional)-basmati rice-a sprinkle of cheese-bacon (dont use if vegy)-diced red onion-diced mixed peppers-seasoning (i usually use cayenne pepper and some mixed herbs, aswell as salt and pepper)Instructions Step 1: -preheat the oven to 200 Step 2: -put the rice on to boil. Step 3: -while its boiling fry up your bacon and chop it into small pieces and leave to one side. Step 4: -add to a frying pan your green beans, red onion, mushrooms and mixed peppers and fry until soft. Step 5: -once the rice is done, drain it and put into a bowl, then add the seasoning and the fryed veg and a drop of BBQ marinade and mix. Step 6: -once the its all mixed in, take the aubergines and half them, scoop out all of the inside part to make a nice boat. Step 7: -fill the aubergine boats with the mix and sprinkle over the cheese. Step 8: -put in the oven and cook for about half an hour or until the cheese is browning. Step 9: -and serve!
