Sub Continental Dish Jalebi

Ingredients
- For jalebi batter
- half cup all purpose flour
- 1 tsp of gram flour (besan)
- 1/2 tsp of sugar
- 1/2 tsp of oil
- 1/2 tsp of yeast
- 1/2 cup of lukewarm water
- ingredients for syrup
- 1 cup sugar
- 1/2 cup water
- pinch of cardamom powder
- few strands of saffron
- 1 tsp of lemon juice
- also needed
- oil to fry
Instructions
For jalebi batter:
1). Dissolve yeast in warm water and let it sit for about 5 mins.
2). Mix, flour, gram flour, oil, and sugar together
3). Add yeast and mix well making sure that there are no lumps and the batter is smooth.
4.) set the batter aside and let it sit in a warm place for 1 hour.
5) make sure the batter is fermented but do not over ferment.
syrup:
boil the sugar and water together. Add lemon juice and saffron and close the heat.
method for making jalebi.
1) fill jalebi batter into a piping bag
2) squeeze the jalebi batter out into hot oil in a pretzel shape.
3) fry jalebi until golden brown on both sides
4) transfer into warm syrup
5) let jalebi soak in hot syrup for few seconds and take out.
6) serve hot
