Summer Tomato Peach Flatbread
This summer tomato peach flatbread was so easy to throw together and such a fun delicious meal.

STEP 1:
Start by stretching your pizza dough out into a flatbread shape. Place a decent amount of semolina flour on your countertop and stretch your dough over it. Work your hands to the outside of the dough and continue stretching until you have your desired shape and size. The semolina on the bottom will give your summer tomato peach flatbread a nice crispy bottom
STEP 2:
Heat a seasoned cast iron skillet- I just did mine with a bit of olive oil- on your grill. If you have a pizza stone that is even better
STEP 3:
Cut your peach into even slices and place the slices on a skewer
STEP 4:
In a bowl mix together equal parts olive oil and balsamic vinegar, brush the mixture onto the peaches, and carefully place them down on the grill to get some color
STEP 5:
Now that the skillet is hot. Carefully transfer your dough into the skillet and close the grill for 5 minutes.
STEP 6:
After 5 minutes, brush the dough with the same balsamic and olive oil mixture
STEP 7:
Next, cover the dough with a thin layer of ricotta cheese.
STEP 8:
Slice the tomato into even pieces and place them on top of the flatbread, sprinkle with salt
STEP 9:
Take the peaches off of the grill and even space them out on your flatbread
STEP 10:
Close the grill and allow the summer tomato peach flatbread to cook for another 5 minutes
STEP 11:
Remove the flatbread from the grill and top with a drizzle of balsamic glaze and basil
STEP 12:
Enjoy!

I love using seasonal ingredients in my meals because it really makes a world of difference. The ingredients you use are just as important as how you prepare the food.

This summer tomato peach flatbread is such a great dinner when you don’t really feel like cooking, but still want something delcicious. It required very little effort and the most hands on cooking part was placing the flatbread onto the skillet.
When it comes to easy meals this is one that I will definitley keep in my back pocket. With minimal cutting and very little cooking this summer tomato peach flatbread is my new go to. I made 3 of these for my family last night and they were completely gone in 5 minutes. My siblings could barely wait to get them off the grill and almost all burned their mouths.
The summer tomato peach flatbread can also be switched up and experimemented with based on your preferences. You could swap out ricotta cheese for burrata or instead of large tomatoes you could try cherry tomatoes so you get a tomato in each bite. If peaches are not your thing you could omit them, but they really do make it so much better.
