Superfood Salad!!

Ingredients

  • 1 salmon fillet (or chicken if you prefer)
  • 1 ripe avocado
  • 1 or 2 ready cooked beetroots (you can buy them in packs of 4 from most supermarkets)
  • 1 serving of lentils and quinoa – see my other recipe here: https://studentrecipes.com/recipes/healthy/lentils-and-quinoa/
  • drizzle of balsamic glaze
  • you can also add things like broccoli and rocket if you want extra veggies.

Instructions

  1. 1. Pre-heat the oven to 180 degrees.

  2. 2. Scoop out the avocado and thinly slice the beetroot.

  3. 3. Season the salmon fillet with salt and pepper, wrap it in tin foil then place it on a baking tray in the oven.

  4. 4. Cook the salmon fillet for 15 minutes while preparing the quinoa and lentils.

  5. 5. Once everything is cooked place it all on a place and squirt a little balsamic glaze over it.
