Swede, Carrot and Tomato Soup

A really easy and cheap one pot soup

Ingredients

  • 1 carrot
  • 1/2 a swede
  • 1 tin of tomatoes
  • Ground black pepper
  • Mixed herbs and chilli powder (optional)
  • 1/2 an onion
  • Water

Instructions

  1. Chop up the onion, swede, and carrot.

  2. Put the onion in a saucepan for 3 minutes or until it starts browning

  3. (tip fry on high heat and add a little water, saves money on oil and browns onions easily!)

  4. Add the swede and carrot, and cook these for another 3 minutes

  5. Add the tin of tomatoes, seasonings, and water to the top, depending on how large the pan is

  6. Then simply leave it on a simmer for about 20 minutes to an hour depending on how much time you have

  7. Add more water if needed during the cooking process

  8. Blend the soup with a blender or stick blender

  9. Water can still be added now if needed to thin the soup

  10. (You can do the same process using less water to make a sauce for pasta or rice)
