Swede, Carrot and Tomato Soup

A really easy and cheap one pot soup
Difficulty Level: easy
Ingredients
- 1 carrot
- 1/2 a swede
- 1 tin of tomatoes
- Ground black pepper
- Mixed herbs and chilli powder (optional)
- 1/2 an onion
- Water
Instructions
Chop up the onion, swede, and carrot.
Put the onion in a saucepan for 3 minutes or until it starts browning
(tip fry on high heat and add a little water, saves money on oil and browns onions easily!)
Add the swede and carrot, and cook these for another 3 minutes
Add the tin of tomatoes, seasonings, and water to the top, depending on how large the pan is
Then simply leave it on a simmer for about 20 minutes to an hour depending on how much time you have
Add more water if needed during the cooking process
Blend the soup with a blender or stick blender
Water can still be added now if needed to thin the soup
(You can do the same process using less water to make a sauce for pasta or rice)
