Sweet Potato And Lentil Curry

A delicious, heathy and easy curry!

Ingredients
- 100g red split lentils
- 2 lg sweet potatoes, cubed
- 1 red pepper, chopped
- 1 jar of your favourite curry sauce (500g)
- 1 can chopped tomatoes
- 1 red onion, finely chopped
- 100g frozen peas
- 1 tbsp. Oil
- fresh coriander (if you have it)
- rice, to serve.
- serves 4, great for freezing
Instructions
1) fry the onion and pepper in the oil for 5 mins, then add the potatoes and cook for another 5 mins.
2) add the tomatoes, lentils and curry sauce and simmer for 25-30 minutes or until potato soft
3) add the frozen peas and cook for 3 mins more
4) season with pepper and coriander and serve
