By Guest Contributor January 25, 2014 Vegetarian Preparation Time Cook Time Servings0Ingredients100g red split lentils2 lg sweet potatoes, cubed1 red pepper, chopped1 jar of your favourite curry sauce (500g)1 can chopped tomatoes1 red onion, finely chopped100g frozen peas1 tbsp. Oilfresh coriander (if you have it)rice, to serve. serves 4, great for freezingInstructions Step 1: 1) fry the onion and pepper in the oil for 5 mins, then add the potatoes and cook for another 5 mins. Step 2: 2) add the tomatoes, lentils and curry sauce and simmer for 25-30 minutes or until potato soft Step 3: 3) add the frozen peas and cook for 3 mins more Step 4: 4) season with pepper and coriander and serve
