Sweet Potato And Lentil Curry

A delicious, heathy and easy curry!

Ingredients

• 100g red split lentils
• 2 lg sweet potatoes, cubed
• 1 red pepper, chopped
• 1 jar of your favourite curry sauce (500g)
• 1 can chopped tomatoes
• 1 red onion, finely chopped
• 100g frozen peas
• 1 tbsp. Oil
• fresh coriander (if you have it)
• rice, to serve.
• serves 4, great for freezing

Instructions

STEP 1:

1) fry the onion and pepper in the oil for 5 mins, then add the potatoes and cook for another 5 mins.

STEP 2:

2) add the tomatoes, lentils and curry sauce and simmer for 25-30 minutes or until potato soft

STEP 3:

3) add the frozen peas and cook for 3 mins more

STEP 4:

4) season with pepper and coriander and serve
