1-chop the sweet potato/yams into french fry size-thickness

2- heat up the oil in the pan – wait until the oil has stopped "bubbling" and has gone "still" or "clear"

3- gently place the sweet potato fries into the pan – do this with a spoon – and do not drop them from a height, the hot oil will splash back and burn you
