Tasty Cous Cous

Ingredients

  • 250 gm plain cous cous
  • 375 gm boiling water
  • 1/2 tsp salt
  • olive oil (or any oil)
  • 1/2 tsp ground black pepper
  • 1 tin sweet corn
  • 1 onion chopped (not too finely)
  • juice of 1 lemon or 2 tbls any vinegar
  • 1/2 jar of pesto sauce (hot variety is great!) bertolli do a nice variety from all major stores

Instructions

  1. 1 boil water in saucepan add salt and oil

  2. 2 add cous cous and simmer very gently for 3 mins.

  3. 3 turn off heat and let stand for 5 mins.

  4. 4 use fork to fluff up the cous cous.

  5. 5 add all the other ingredients and stir well.

  6. enjoy

  8. if you want you could other ingredients, like:

  9. chopped celery

  10. chopped peppers

  11. chopped sun dried tomatos

  12. whatever you fancy.

  13. avoid adding cucumber unless you are going to consume the cous cous as soon as its made.
