Name: Tomato And Basil Soup
Ingredients: 1 tin peeled plum tomatoes; 2 pints water; 2 tbsp tomato puree; 1 onion; 1 large potato; 3-4 cloves garlic; 2 tbsp olive oil; small handful of fresh chopped basil; salt and pepper; 1/4 tsp red chilli flakes (optional)

Step 1:

1) peel and chop onion and garlic

Step 2:

2) heat oil and fry onion and garlic until soft

Step 3:

3) peel and chop the potato

Step 4:

4) add water to pan, add potato and bring to boil

Step 5:

5) once boiling, add tinned tomato, tomato puree, stir and simmer until potato is cooked

Step 6:

6) add the chopped basil leaving some for garnish

Step 7:

7) blend the mixture and season to taste

Step 8:

8) garnish with basil and serve with fresh bread
