Step 1:

  • Drain the Sun-dried tomatoes and add to a little hot water to soften – set aside.

  • Fry the onions and garlic in oil lightly until softened.

  • Add the tin of tomatoes and some puree and leave to simmer. Add the sun-dried tomatoes then sprinkle a little sugar to heighten the flavour of the tomatoes.

  • Put Gnocchi on to boil.

  • Cut the mozzarella into 1cm squared cubes and add to the mixture, along with chopped basil. Let the cheese melt into the mixture and continue to stir.

  • Drain the gnocchi and add to the mixture –

  • Season and add cayenne pepper.

  • Serve and place a basil leaf on top for presentation!
