Tomato Chicken

Ingredients
- Chicken legs and thighs. Two for each person you’re cooking for.
- Garlic
- Tin of chopped tomatoes
- All purpose seasoning.
- Chilli powder.
- One red pepper and an onion.
- Olive Oil
- Rice
Instructions
Coat the chicken in some olive oil with all purpose seasoning to put in the oven to cook.
When there’s no more pink in the chicken take it out of the oven.
Fry the garlic, tomatoes, pepper and onion. Add a small cup of water and boil on a low heat. Add a sprinkle of all purpose seasoning and chilli powder. The amount of chilli powder depends on how hot you like your food. If you don’t like spice you don’t have to add any at all.
Once the sauce has thickened slightly add the chicken. Coat the chicken with the sauce and then cover and leave to boil for 20 minutes.
Whilst the chicken is marinading, cook your rice to accompany it.
