Ingredients
- 2 red bell peppers
- 6 cherry tomatoes
- 2 medium-large carrots
- Zest of 1 orange
- 1 cucumber
- 1 iceberg lettuce
Instructions
Finely shred the cucumber and carrots. Halve the tomatoes. Dice the peppers and lettuce. Mix, toss well, sprinkle over orange zest, serve with dressing of your choice.
