Tuna Mayo Jacket Potato With Cucumber

A creative twist on a classic for a fairly quick tasty meal

Ingredients
- 1 can of tuna (no-drain if you don’t want too much mess)
- 1 large baking potato
- 4-6 slices of cucumber
- 2-4 tablespoons of a good quality mayonnaise
Instructions
Pre-heat your oven to gas mark 6 or 200 degrees on a electric for 15minutes. Take a large baking potato and cover in aluminium foil and place in oven and leave to cook to for 40-45 minutes until you can prod with a sharp knife and is soft. Empty tuna into a bowl and add mayonnaise until making a slightly thick. Cut cooked potato in half and spoon mixture onto potato. Finally cut about 4-6 slices off the cucumber and place slices on top of tuna mayo mixture and enjoy! 🙂
