Step 2: 2)Heat about 1 tbsp butter in a large pan. Step 3: 3)Add all veg and soften for about 5 minutes, stirring. Step 4: 4)Add veg stock/water to cover the veg by a good inch. Step 5: 5)Season well. Step 6: 6)Bring to boil, reduce heat and simmer for 30-45mins/until veg is cooked.
