Home › Vegetarian › VEGETABLE LASAGNE VEGETABLE LASAGNE RECIPE BY Guest Contributor CHEAPER THAN MEAT BUT JUST AS TASTY PREP 0 min COOK 0 min TOTAL 0 min YIELD 0 JUMP TO RECIPE SHARE Facebook Share on Facebook Twitter Share on Twitter Pinterest Share on Pinterest Email Share via Email Ingredients1 tin chopped tomatoes1 chopped red onion1 clove garlic crushedhandful brocolli1 courgette diced1 carrot dicedfew mushroomshalf each of red green and yellow pepper dicedpacket dried egg lasagne (there is no need to pre cook this)teaspoon mixed herbssalt and pepper to taste1 tablespoon tomato pureehalf a pint boiling water2 chicken oxo1 pint cheese sauce made from scratch or 2 packets of dried schwartz cheese sauce made as per instructionsgrated cheese to finishInstructions Step 1: fry all vegetables and garlic in a little olive oil Step 2: add tomatoes tomato puree oxo water salt and pepper and mixed herbs Step 3: simmer for twenty mins Step 4: grease a square oven dish or tray Step 5: lay enough lasange sheets at the bottom to cover the tray without overlapping, they snap quite easily.
