Vegetarian Hotpot!

For a filling dish packed full of healthy goodness, give this hotpot a whirl!

Ingredients
- ? can of mixed beans, drained
- ? 150g red lentils
- ? 100g sweetcorn
- ? 150g mushrooms
- ? 1 large red onion
- ? potatoes to top – use enough to cover your baking dish
- ? can of condensed vegetable soup
- ? 100ml vegetable stock
Instructions
? dice the onion and mushroom, and fry off together. Set aside
? very thinly slice potatoes to cover the top of the baking dish you are using. Boil for about 5 minutes, until just softening, then drain and set aside.
? cook the sweetcorn as required – it’s fine to use frozen and do it in the microwave!
? cook the lentils for 5 minutes in a pan of water, then drain.
? add the mushrooms, onion, sweetcorn and beans.
? stir through the stock and allow to bubble slightly, then add the tinned soup
? mix everything well, and simmer for 5 minutes
? transfer to an oven proof dish and top with the sliced potatoes
? place in the oven for approximately 20 minutes, until bubbling and the potatoes are going golden
? serve up and enjoy!
