Vegetarian Hotpot!

For a filling dish packed full of healthy goodness, give this hotpot a whirl!

Ingredients

  • ? can of mixed beans, drained
  • ? 150g red lentils
  • ? 100g sweetcorn
  • ? 150g mushrooms
  • ? 1 large red onion
  • ? potatoes to top – use enough to cover your baking dish
  • ? can of condensed vegetable soup
  • ? 100ml vegetable stock

Instructions

  1. ? dice the onion and mushroom, and fry off together. Set aside

  2. ? very thinly slice potatoes to cover the top of the baking dish you are using. Boil for about 5 minutes, until just softening, then drain and set aside.

  3. ? cook the sweetcorn as required – it’s fine to use frozen and do it in the microwave!

  4. ? cook the lentils for 5 minutes in a pan of water, then drain.

  5. ? add the mushrooms, onion, sweetcorn and beans.

  6. ? stir through the stock and allow to bubble slightly, then add the tinned soup

  7. ? mix everything well, and simmer for 5 minutes

  8. ? transfer to an oven proof dish and top with the sliced potatoes

  9. ? place in the oven for approximately 20 minutes, until bubbling and the potatoes are going golden

  10. ? serve up and enjoy!
