Step 1: ? dice the onion and mushroom, and fry off together. Set aside
Step 2: ? very thinly slice potatoes to cover the top of the baking dish you are using. Boil for about 5 minutes, until just softening, then drain and set aside.
Step 3: ? cook the sweetcorn as required – it’s fine to use frozen and do it in the microwave!
Step 4: ? cook the lentils for 5 minutes in a pan of water, then drain.
Step 5: ? add the mushrooms, onion, sweetcorn and beans.
Step 6: ? stir through the stock and allow to bubble slightly, then add the tinned soup
Step 7: ? mix everything well, and simmer for 5 minutes
Step 8: ? transfer to an oven proof dish and top with the sliced potatoes
Step 9: ? place in the oven for approximately 20 minutes, until bubbling and the potatoes are going golden
Step 10: ? serve up and enjoy!
