Step 1:

  • ? dice the onion and mushroom, and fry off together. Set aside
  • Step 2:

  • ? very thinly slice potatoes to cover the top of the baking dish you are using. Boil for about 5 minutes, until just softening, then drain and set aside.
  • Step 3:

  • ? cook the sweetcorn as required – it’s fine to use frozen and do it in the microwave!
  • Step 4:

  • ? cook the lentils for 5 minutes in a pan of water, then drain.
  • Step 5:

  • ? add the mushrooms, onion, sweetcorn and beans.
  • Step 6:

  • ? stir through the stock and allow to bubble slightly, then add the tinned soup
  • Step 7:

  • ? mix everything well, and simmer for 5 minutes
  • Step 8:

  • ? transfer to an oven proof dish and top with the sliced potatoes
  • Step 9:

  • ? place in the oven for approximately 20 minutes, until bubbling and the potatoes are going golden
  • Step 10:

  • ? serve up and enjoy!
