Boil the pasta in a pan, add a spoon of salt and a bit of olive oil

in a second pan heat some olive oil and add a level spoon of cumin seeds.

add the onions and when they start to go brown add the sweetcorn

sweetcorn doesn’t need much cooking so put in the pasta sauce soon after.

i blend the sauce before because shop-made always has huge chunks in them.

add a spoon of salt and a spoon of pepper and stir the sauce well. Leave it on a low heat.

by now the pasta should be cooked. Transfer the pasta into the sauce.

top tip: do not completely drain the pasta! The water that the pasta is boiled in is extremely vital and changes the whole flavour so be sure to pour some in too. I always add a little extra than you need.

stir the pasta and the sauce together and leave on a low heat so that any excess water evaporates.I think it turns out better if its not too dry though.

sprinkle some cheese on top and some fresh basil if you have any :p yum
