Beetroot And Goats Cheese Gratin

Great combination and good for all seasons!



  • Serves 1
  • 1 x beetroot vacuum pack 250g
  • 1 x 100g capricorn goat's cheese (or similar)
  • 100ml whipping cream
  • 1tbsp horseradish sauce
  • approximately 2 tbsps golden breadcrumbs
  • small handful of grated parmesan
  • pepper
  • 1 x gratin dish (about 23x17cm)


1. Pre-heat the oven to 180

2. Slice the beetroot into 1cm slices.

3. Slice the goat's cheese into half cm slices.

4. Mix together the cream and horseradish.

5. Place the goat's cheese and beetroot in layers in the dish and on each layer pour some of the cream mix over it.

5. Finally sprinkle the parmesan and breadcrumbs over it, season with pepper and place in the oven.

6. Cook for 10-12 minutes.

7. Goes great with rocket!

    I feel i should qualify my comment below in case it sounded a bit harsh. It's true that parmesan is made using animal rennet however i know lots of vegetarians who eat sweets which include technically non vegetarian gelatin and aren't even that bothered by non vegetarian gravy. The reason that i listed it in the vegetarian section is that it for many people it would be consider a vegetarian dish and it is possible to make it without the parmesan. I understand your point though that if you are a very strict vegetarian then this dish has to be made without the parmesan. It's still delicious without it ;)

    Parmesan is vegetarianÂ… it's not vegan though. You sort it out.
