Bombay Potatoes

Great indian side dish

Ingredients

  • Potatoes
  • Jar of Pataks Curry Paste (any flavour but i like tikka)
  • Oil
  • 1 Onion

Method

1. Peel and chop potatoes into bitesize chunks

2. Boil potatoes for 10 - 15 minutes until almost done

3. Whilst potatoes are boiling slice an onion into 1/2 circles

4. Add oil to a frying pan (nonstick is easier), fry onions on low heat until potatoes are done

5. Add about a tablespoon of pataks per person (depending how spicy you like it), fry with the onions for a couple of minutes then add the drained potatoes and fry for about 15-20 minutes until most are crispy on the outside

Enjoy served with any meat or vegetarian options

    If the dis is dry you could try making a sort of gravy thing (idk the English word, sorry!) with veg. stock - just add some of the curry paste into the stock and pour over the potatoes =)
