Roasted Tomato Salad

Tomato salad



  • Tomatoes
  • olive oil
  • balsamic vinegar
  • basil leaves
  • garlic
  • salt and pepper


Plunge the tomatoes into boiling water, leave for a minute. When cool enough to handle remove the skin.

slice tomatoes in half and lay on a baking tray.

slice some garlic and lay on top of each tomato along with a basil leaf.

pour a little oil over each tomato

put in the oven at 200 degrees for about an hour. The sides will be getting blackened.

take out of the oven and leave to cool a little. Mix some balsamic and olive oil (equal parts) together and pour over the tomatoes. Season.

serve either warm with crusty french bread or cold as a salad dish.
