Vegetable Curry

Ingredients

  • Serves 4
  • 2 x red onions, sliced
  • 2 x onion cloves, roughly chopped
  • 1 x tin of tomatoes
  • 240g tenderstem broccoli, chopped into chunks
  • 1 x red pepper, thinly sliced,
  • 4 x medium sized potatoes, thinly sliced
  • 1 large courgette, chopped into bite-size chunks
  • 3 tbsp curry powder
  • 4 tbsp tikka masala paste
  • olive oil
  • serve with plain yoghurt

Method

1. Boil the potatoes while preparing the rest of the veg.

2. Once cooked through, take the potatoes off the heat and drain. Put them to one side.

3. Heat some oil in a large pan and once the pan is hot, add the onions. Cook the onions until soft, stirring often.

4. Add the garlic, broccoli, courgette and red pepper.

5. Add curry paste and stir well.

6. After a couple of minutes, add the tomatoes and the curry powder.

7. Add the potatoes and stir again.

8. Season with salt and pepper.

9. Finally taste test! You may want to add more powder and paste.

    I think this tastes delicious but i have some teachers who is alergic from the other vegetables they only eat like horse radish,and any healthy vegetables

    Nice with rice, and/or lentils and/or chick peas/kidney beans/cow peas
    (so you fart plenty in class!)
