Vegetable Fajitas (serves 4)

Great meal for mates just before a night out or even while the footy is on and the beer is flowing

Ingredients

  • 2 Tablespoons of Vegetable Oil
  • 2 large Onion, thinly sliced
  • 2 Garlic Cloves, crushed
  • 2 Red Peppers, cored, deseeded and thinly sliced
  • 2 Green Peppers, cored, deseeded and thinly sliced
  • 2 Chillies, deseeded and thinly sliced (you can have up to 4 Chillies depending how hot you like food)
  • 2 Teaspoons of choped Oregano
  • 250g Button Mushrooms, Sliced
  • 12 Tortillas
  • Salt and Pepper
  • To Top:
  • Salsa
  • Guacamole
  • Soured Cream

Method

1) Heat the oil in a large frying pan and fry the onions and garlic for about 5mins until they are soft and golden brown.

2)Add the Red and Green Peppers, Chillies and Oregano and stir well. Fry gently for about 10 minutes until cooked and tender.

3) Add the mushrooms and cook quickly for 1 minute more, stirring well to mix the mushrooms with the other vegetables. Add a good dash of salt and pepper and stir again.

4)Spoon the Sizzling hot vegetables into the tortillas and add whatever toppings you like. Roll up or fold over the fajita, then bite in!!

    Claire- it only took like an 1 hour to make but i'm a very bad in the kitchen so it may be quicker for you. They tasted nice:) added grated cheese as well. Hated the guacamole

    How long does it take to make all this? I only have 1hour 40mins ?
