Vegetarian Hotpot!

For a filling dish packed full of healthy goodness, give this hotpot a whirl!



  • • can of mixed beans, drained
  • • 150g red lentils
  • • 100g sweetcorn
  • • 150g mushrooms
  • • 1 large red onion
  • • potatoes to top - use enough to cover your baking dish
  • • can of condensed vegetable soup
  • • 100ml vegetable stock


• dice the onion and mushroom, and fry off together. Set aside

• very thinly slice potatoes to cover the top of the baking dish you are using. Boil for about 5 minutes, until just softening, then drain and set aside.

• cook the sweetcorn as required - it's fine to use frozen and do it in the microwave!

• cook the lentils for 5 minutes in a pan of water, then drain.

• add the mushrooms, onion, sweetcorn and beans.

• stir through the stock and allow to bubble slightly, then add the tinned soup

• mix everything well, and simmer for 5 minutes

• transfer to an oven proof dish and top with the sliced potatoes

• place in the oven for approximately 20 minutes, until bubbling and the potatoes are going golden

• serve up and enjoy!
