dice the onion and mushroom, and fry off together. Set aside
very thinly slice potatoes to cover the top of the baking dish you are using. Boil for about 5 minutes, until just softening, then drain and set aside.
cook the sweetcorn as required - it's fine to use frozen and do it in the microwave!
cook the lentils for 5 minutes in a pan of water, then drain.
add the mushrooms, onion, sweetcorn and beans.
stir through the stock and allow to bubble slightly, then add the tinned soup
mix everything well, and simmer for 5 minutes
transfer to an oven proof dish and top with the sliced potatoes
place in the oven for approximately 20 minutes, until bubbling and the potatoes are going golden
serve up and enjoy!
