Vegetarian Spag Bol

Nutritious, easy and healthy!



  • 250g Quorn mince
  • 2 tins of chopped tomatoes
  • 1 chopped onion
  • 1-2 finely chopped garlic cloves
  • 8-12 mushrooms
  • 1 tbsp mixed herbs
  • 300d dried wholwheat spaghetti (75g per person)


Serves 4: Prep time 10 mins: Cooking time 20mins

1)Add chopped onion+garlic to a large pan and use a few sprays of oil to fry

2)After a couple of minutes add mince and chopped mushrooms- stir well for about 5 minutes

3)Once mixture is mixed well add the tinned tomatoes with mixed herbs and stir well

4)Cover and simmer for about 15 mins

5)Meantime boil a pan of water and cook spaghetti (about 15 minutes)

6)After 15 minutes of simmering give bolognese a quick stir and turn off heat

7)Drain spaghetti and divide into 4 plates

8)Spoon out bolognese (into 4 plates) on top of the spaghetti

9)If desired, sprinkle some parmasean cheese on top and/or some fresh parsley


[if you want to add a little spice, add one chopped chilli (deseeded) at step 1]
