Ingredients

  • Tin Kidney beans
  • olive oil
  • half a large onion (or 1 small/medium)
  • red pepper
  • handful sweetcorn
  • 8 – 10 mushrooms
  • serving of green beans
  • 1/3 tube tomato puree
  • tsp garlic puree
  • tin of chopped tomatoes
  • 1 tsp cumin
  • 1tsp chilli powder

Instructions

  1. fry a chopped onion in the oil with the garlic until soft

  2. add the red pepper and cook for 2 mins before adding the rest of the vegetables.

  3. cook for about 5 mins.

  4. add the rest of the ingredients

  5. bring to the boil

  6. then simmer for about 30 – 45 mins to let the flavours infuse.

  7. serve with rice
