Veggie Bolognese

Ingredients
- This recipe serves 4 people.
- 375g spaghetti (or however much you want!)
- 1/2 tablespoon veg oil
- 1 chopped onion
- 200g canned baby carrots
- 1 leek
- 400g canned chopped tomatoes
- 1 tablespoon tomato puree
- 125g mushrooms
Instructions
1. Cook the spaghetti as directed on its packet
2. Whilst doing that, heat the oil in a saucepan and add in the onions.
3. Fry on a low heat for about 4 minutes
4. Then stir in the chopped baby carrots, sliced leeks, tomatoes, tomato puree and chopped mushrooms.
5. Add a little bit of salt and pepper and leave to simmer for about 10 minutes
6. Drain the pasta and serve!
You can freeze the sauce, so just make loads of it! Saves money that way too
