Veggie Kebabs

Us vegetarians can still have as much fun as carnivores!

Ingredients

  • 200g mashed potato
  • 2 tbsp sweetcorn kernels (boiled)
  • a sprinkle of sea salt
  • a sprinkle of black pepper
  • 1 tsp mixed herbs
  • 1/2 tsp paprika
  • 1 tbsp peas (optional)
  • 2 tbsp breadcrumbs
  • 1 whisked egg
  • oil for frying

Instructions

  1. 1) mix all of the ingredients together except last three ingredients

  2. 2) shape into patties / kebabs (2cm thick)

  3. 3) heat oil in a large frying pan

  4. 4) dip kebabs into egg

  5. 5) coat kebabs evenly with breadcrumbs

  6. 6) shallow fry in oil until golden brown on each side

  7. 7) drain on kitchen towel paper

  8. 8) place in pitta bread, or burger buns with salad leaves, ketchup or mayo

  9. 9) keep tissues handy, for a delicious mess!
