Veggie Spaghetti

Easy, home made spaghetti

Ingredients
- 1 tin of chopped tomatoes
- 1 onion, chopped
- big pack of mushrooms, sliced
- tin of red kidney beans, rinsed
- bag of Quorn mince (can use real mince if you are a meat eater)
- enough spaghetti for 3-4 people
- two tblspoons of tomato puree
- big squeeze of sweet chilli sauce
- a veg stock cube
- a load of herbs spices eg chilli, basil, organo, garlic powder, mixed herbs
Instructions
1. fry the onion in a little oil until soft
2. add the tomatoes and boil with the onions for about 5 -1 0 mins (releases lycopenes, mmm healthy)
3. add the quorn to the mix (needs about 10/15 mins to cook)
4. add the tomato puree, sweet chilli sauce and a dissolved stock cube
5. add the mushrooms and cook until soft, stir in the rinsed kidney beans
6. meanwhile boil the spaghetti with pack instructions
7. just before spaghetti is cooked mix all the herbs and spices in a stir well
you can either blend the spaghetti in or spoon the sauce over 🙂
