Ingredients

  • 1 lb pineapple chunks
  • 1 cup vanilla yogurt
  • 8 ounces white chocolate

Instructions

  1. Roughly chop pineapple into small bite sized pieces and place into a large mixing bowl

  2. Add in 1 cup of vanilla yogurt and mix until fully incorporated

  3. Place a piece of parchment onto a baking sheet and scoop 12 even dollops of the mixture onto the baking sheet, about 1/4 cup each

  4. Place the baking sheet into the freezer until the pineapple yogurt mixture is frozen, about 1 hour

  5. While the clusters are freezing, place white chocolate into a microwave-safe bowl and microwave in 30-second increments stirring between each time. This avoids burning

  6. allow the chocolate to cool slightly but retain the same melted consistency

  7. Once frozen, remove the yogurt clusters from the freezer and carefully dip the clusters into the white chocolate

  8. Place the now-coated clusters back onto the parchment and freeze for 10 minutes or until the white chocolate sets

  9. Remove from the freezer and enjoy!

The strawberry clusters have the same idea as these white chocolate and pineapple yogurt clusters, but they are coated in dark or milk chocolate. I’ve seen a ton of creators doing these with strawberries and I wanted to add a bit of a twist. The pineapple and white chocolate complement each other so nicely you have to give these a try.

The white chocolate adds the perfect amount of sweetness to these clusters so you don’t need to worry about adding any honey or additional sweetener to the yogurt. I used the Lindt Classic Recipe White Chocolate and it worked perfectly.
