As I am sure you have seen on TikTok in the past few months, these delightful, bite-sized apple pie cookies are not only a visual treat but a scrumptious experience that blends the flavors of a classic apple pie into the convenience of a handheld cookie. They have been all over my for you page with other fall and Halloween-themed recipes. My girlfriend and roommates both sent me this recipe to make, so I knew we had to give it a try.

STEP 1:
First, toss the sliced apples with lemon juice and set aside.
STEP 2:
In a saucepan, combine cornstarch, sugar, brown sugar, cinnamon, water, and caramel. Stir well and bring to a boil over medium-high heat, whisking constantly.
STEP 3:
Let it boil for two minutes to thicken, and then fold in the apple pieces. Reduce the heat to low, cover the pot, and let it simmer for about 5 minutes or until the apples are soft. Remove the apples from heat and allow them to cool.
STEP 4:
Remove apples from caramel sauce. Cut apples into smaller pieces and combine again with caramel.
STEP 5:
Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.

STEP 6:
Lightly dust the work surface with flour and lay out one pie crust. Spread the caramel apple mixture onto the crust.
STEP 7:
Cut the second pie crust into ½ inch strips and create a lattice over the top of the filling. Use a glass or cookie cutter to cut out individual cookies.
STEP 8:
Spray with oil and sprinkle with cinnamon and sugar. Bake for 20-30 minutes or until golden brown.
