Green Chile Burrito Ingredients
- 1 lb of ground beef
- 1 tsp of olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp of ground cumin
- 1/2 tsp of paprika
- 1 tsp of salt
- 1/2 tsp of black pepper
- 2 cans of diced green chilies
- 1 cup of beef broth
- 8 flour tortillas
- 1 cup of shredded cheese (cheddar or Monterey Jack)
- 1/4 cup of chopped fresh cilantro
- Sour cream and salsa for serving
Green Chile Burrito Instructions
- Pour the olive oil into a large skillet and place it over medium heat.
- Add the chopped onion and minced garlic, then cook for 3 minutes, stirring often, until they soften and look translucent.
- Add the ground beef to the skillet. Cook it for 10 minutes, breaking it apart with a spatula as it browns, until there is no pink meat left.
- Carefully drain off any extra fat from the pan.
- Place the skillet back over the heat, then stir in the cumin, paprika, salt, and black pepper so the beef is evenly coated.
- Mix in the diced green chilies and beef broth.
- Bring the mixture to a gentle simmer, then turn the heat down low and let it cook for 10 minutes so the flavors can blend together.
- While the beef mixture cooks, warm the tortillas for a few seconds in the microwave or in a dry skillet until they are soft and flexible.
- Spoon 1/2 cup of the beef filling onto each tortilla and sprinkle shredded cheese over the top. Fold in the sides, then roll each tortilla into a burrito, making sure not to overfill them.
- Arrange the burritos seam side down in an oven-safe dish.
- Heat the oven to 350°F (175°C), then bake the burritos for 10 minutes until the cheese has melted and everything is heated through.
- Take the burritos out of the oven and scatter chopped cilantro over the top.
- Serve with sour cream and salsa if desired.
