We’ve all seen breakfast burrito’s on fast food menus. Offering the classic combination of potatoes, eggs, bacon, sausage, and cheese. This recipe mirrors that, but cuts down on the cost.

It’s also a great option when hunger hits fast, especially if you skip a couple of ingredients and steps. By cutting out potatoes and sausage, the burrito can be in your hand and ready to eat in under 10 minutes. However, we prefer the extra time, as the extra ingredients make it far more filling.

It’s amazing how popular breakfast burritos have become outside the Southwest. You can find them everywhere, from gas stations to coffee shops. The home-cooked version is much better though. It’s hotter, fresher, and completely customizable.

Breakfast Burrito Recipe Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 4 strips of bacon
  • 4 sausages
  • 1/2 cup of shredded cheddar cheese
  • 1 avocado, sliced
  • 2 large flour tortillas
  • 1 tablespoon of butter
  • 2 tablespoons of water

Breakfast Burrito Recipe Instructions

  1. Preheat the oven to 350F350∘𝐹 (175C175∘𝐶).
  2. Season your sausages and add to the oven. Cooking for 25 minutes and turning halfway through. They require an internal temperature of 160F160∘𝐹 (71C71∘𝐶) to be cooked thoroughly.
  3. In a skillet add a little oil and sauté diced potatoes, seasoning with salt and pepper. Cook until browned and tender (10 to 12 minutes).
  4. In a wide nonstick pan add a little water (2 tablespoons) over medium heat. The water helps render the bacon fat.
  5. Add your bacon to the pan, in a single layer, no overlapping. Turn as the sides brown and crisp. This should take 10 minutes depending on the thickness of the bacon. Remove from the pan once cooked.
  6. In the same nonstick pan, add butter and reduce temperature to a medium-low heat.
  7. Whisk the eggs with milk, plus a pinch of salt and pepper.
  8. Add the eggs to the pan and scramble gently, until just set. Once cooked turn off the heat.
  9. Warm the tortillas so they fold without cracking. Do this in a dry skillet for 20 seconds per side.
  10. Build each burrito, adding your eggs, potatoes, bacon, sausage (sliced), and cheese.
  11. Fold the sides in, roll tightly, and serve with sauces of your choice.
