It might sound odd, but adding fries to a burrito is a classic South Californian move. This recipe combines steak, fries, cheese, guacamole, sour cream and salsa. It’s fast food at home, and it tastes fantastic.
The great things about this dish is that it’s not expensive to feed four, the prep is simple, and it’s most-likely different to other burritos people have tried thanks to the crunchy fries.
The key is to have thinly sliced steak and super crispy fries. These details matter. Plus, if you have the time, once wrapped, give the burrito a quick toast. It really does add to the texture.
If you’re looking for a new burrito recipe, give this Californian classic a try.
California Burrito Recipe Ingredients
- 1 lb of beef skirt steak
- Salt and pepper to taste
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 4 large flour tortillas
- 2 cups of frozen french fries
- 1 cup of shredded cheddar cheese
- 1 cup of guacamole
- 1 cup of fresh salsa
- 1 tablespoon of sour cream
California Burrito Recipe Instructions
- Heat your oven to 425°F.
- Spread the frozen fries out on a baking sheet and bake 20–25 minutes until crisp, flip them halfway so both sides brown.
- While the fries cook, pat the steak dry. Season both sides with salt, pepper, garlic powder, and onion powder.
- Warm a grill or grill pan over medium-high heat. Add olive oil, then lay the steak in once the surface is hot.
- Cook for 5 minutes per side, or until it hits about 140°F for medium rare. Remove it from the heat when it’s cooked.
- Rest the steak under foil for 10 minutes.
- Slice thinly across the grain so it stays tender and easy to chew.
- Soften the tortillas by putting them in the microwave for 15 seconds or warm them briefly in a dry skillet.
- Build each burrito by adding steak, fries, cheese, guacamole, then salsa. Keep the pile tight.
- Fold the sides in, then roll from the bottom up, snug and secure.
- Toast the burrito for a minute per side in a skillet for a lightly crisped tortilla.
- Add sour cream on the side and serve while hot.
