Chicken Corn Soup Ingredients

  • 2 tablespoons of vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 pound of boneless, skinless chicken breasts, diced
  • 4 cups of chicken broth
  • 1 can of creamed corn (15 ounces)
  • 1 cup of sweet corn kernels, fresh or frozen
  • 1 tablespoon of soy sauce
  • Salt and pepper to taste
  • 1 tablespoon of cornstarch
  • 2 tablespoons of water
  • 2 green onions, sliced

Chicken Corn Soup Instructions

  1. Warm the oil in a large pot over medium heat.
  2. Add the onion and cook for 4 minutes, until it softens and turns translucent.
  3. Add the garlic and mix. Let it cook for 1 minute.
  4. Add the diced chicken. Cook for 10 minutes, stirring now and then, until the chicken is cooked through.
  5. Pour in the broth.
  6. Then add creamed corn and the corn kernels. Stir well.
  7. Add soy sauce, then season with pepper and salt.
  8. Bring to a gentle boil, then lower the heat and simmer for 15 minutes so the flavors settle in.
  9. Whisk cornstarch with water in a small bowl until smooth.
  10. Stir the soup and slowly pour in the cornstarch slurry so it thickens without clumps.
  11. Let it cook for a further 2 minutes.
  12. Turn off the heat and top with sliced green onions.
