Chipotle Burrito Ingredients

  • 1 pound of boneless, skinless chicken breasts, cut into strips
  • 1 tablespoon of olive oil
  • 1 tablespoon of chipotle chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • 1 cup of white rice
  • 2 cups of chicken broth
  • 1 can of black beans, drained and rinsed (15 oz)
  • 4 large flour tortillas
  • 1 cup of shredded cheese (cheddar or mexican blend)
  • 1 cup of salsa
  • 1 avocado, sliced
  • 1/4 cup of chopped fresh cilantro
  • 1 lime, cut into wedges

Chipotle Burrito Instructions

  1. Place a large frying pan over medium heat and add the olive oil.
  2. Add the chicken strips, chipotle chili powder, cumin, smoked paprika, salt, and pepper. Cook for 10 minutes, stirring now and then, until the chicken is fully cooked and lightly browned.
  3. Remove from the heat and set aside.
  4. Pour the chicken broth into a medium saucepan and bring it to a boil.
  5. Stir in the rice, lower the heat, and cover with a lid. Let it simmer for 20 minutes, or until the rice is tender. Fluff the rice with a fork once done.
  6. Add the black beans to a small saucepan and heat them over low heat. Stir from time to time and cook for about 5 minutes, or until warmed through.
  7. Set the oven to 350°F. Wrap the tortillas in foil and place them in the oven for around 5 minutes so they soften and warm up.
  8. To build the burritos, place one warm tortilla on a flat surface. Spoon some chicken, rice, beans, shredded cheese, and salsa into the middle. Add a few slices of avocado and a sprinkle of chopped cilantro on top.
  9. Fold in the sides of the tortilla, then roll it up from the bottom so the filling stays tucked inside. Continue until all tortillas and fillings have been used.
  10. Serve the burritos right away with lime wedges on the side.
