Ingredients

  • 4 ounces semi-sweet chocolate, chopped
  • 1/2 cup unsalted butter (1 stick)
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • Butter and cocoa powder (for greasing ramekins)
  • Powdered sugar (for garnish, optional)
  • Fresh berries or vanilla ice cream (optional, for serving)

Instructions

  1. Preheat the oven to 425°F. Grease four ramekins with butter and dust with cocoa powder, ensuring the entire inside is coated. Tap out the excess cocoa powder and set the ramekins on a baking sheet.
  2. In a microwave-safe bowl or double boiler, melt the chopped chocolate and butter together, stirring until smooth. Let it cool slightly.
  3. In a mixing bowl, whisk the eggs, egg yolks, and granulated sugar until thick and pale. Slowly pour in the melted chocolate mixture and whisk until combined. Gently fold in the flour until just incorporated.
  4. Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
  5. Bake the cakes in the preheated oven for 11–12 minutes, or until the edges are set but the centres are still soft. Remove from the oven and let the cakes rest for 1 minute.
  6. Run a knife around the edges of each cake to loosen. Invert the ramekins onto plates and gently tap to release the cakes. Serve immediately, garnished with powdered sugar, fresh berries, or vanilla ice cream if desired.
