The creamy sauce is thick and flavorful, while the pops of sweetness from the cherry tomatoes and the slight bitterness from the spinach give each mouthful a different flavor combination that keeps the dish interesting.

Creamy Parmesan Chicken Recipe Ingredients
- 2 large boneless and skinless chicken breasts
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- 1 teaspoon of Italian seasoning
- 1/2 teaspoon of garlic powder
- 3 garlic cloves, minced
- 1 cup of chicken stock
- 1 cup of heavy cream
- 1/2 cup of grated parmesan cheese
- 1 teaspoon of red pepper flakes
- 1/4 teaspoon of dried oregano
- 1/4 teaspoon of dried thyme
- 1/2 cup of chopped sun-dried tomatoes
- 2 cups of baby spinach
- Fresh basil, chopped, for garnish
Creamy Parmesan Chicken Recipe Instructions
- Preheat the oven to 400°F and lightly grease a medium baking dish or oven safe skillet with olive oil.
- Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, Italian seasoning, and garlic powder.
- Place the chicken breasts in the baking dish in a single layer.
- In a bowl, stir together the heavy cream, chicken broth, minced garlic, and parmesan cheese. Do not warm the chicken broth first.
- Pour the mixture over and around the chicken.
- Add the chopped cherry tomatoes, spinach and red pepper flakes.
- Dot the top with small chunks of butter.
- Bake uncovered for 25 minutes, or until the chicken reaches 165°F in the thickest part.
- Spoon the creamy sauce over the chicken before serving and top with fresh basil, if using.
