The crisp batter, fresh zucchini, and gooey parmesan all come together in this fritter recipe. It’s perfect as a snack, appetizer, or even a main with salad or proteins.

It was sometime around 2023 when zucchini seemed to appear in everyone’s kitchen. They’re a versatile veggie that you can almost do anything with. For example, I’ve made spaghetti with them, used them in curries, and used them in bakes. I’ve even seen cake recipes where they’re used.

What’s great about this recipe is that it’s really simple. The hardest parts are getting the zucchini dry and making sure the oil is hot before frying. Neither is rocket science. Don’t believe how easy it is? Check out the ingredients and cooking steps below.

Zucchini Fritters Ingredients

  • 2 medium zucchini, grated
  • 1 teaspoon of salt
  • 2 large eggs
  • 1/3 cup of all-purpose flour
  • 1/4 cup of grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon of ground black pepper
  • 1/4 teaspoon of baking powder
  • 2 tablespoons of chopped fresh parsley
  • Olive oil, for frying

Zucchini Fritters Instructions

  1. Grate the zucchini with a box grater.
  2. Put the grated zucchini in a colander, sprinkle it with salt, and let it sit for 10 minutes to help remove extra moisture.
  3. After 10 minutes, rinse it, then squeeze it well with a clean kitchen towel to remove as much water as possible.
  4. In a large bowl, beat the eggs. Add the flour, pepper, and baking powder.
  5. Mix until a thick batter forms.
  6. Add the parmesan cheese, garlic, and chopped parsley and mix.
  7. Next, add the drained zucchini to the bowl and fold it into the batter until evenly mixed.
  8. Heat 2 tablespoons of olive oil in a large skillet over medium heat (about 375°F).
  9. Drop spoonfuls of the mixture into the hot oil and gently flatten them with the back of a spoon or spatula.
  10. Cook for 4 minutes per side, or until golden brown and crispy.
  11. Transfer the cooked fritters to a paper towel-lined plate to drain any extra oil.
  12. Serve warm, and garnish with more fresh parsley if you like.
