Korean BBQ Burrito Ingredients
- 1 lb of beef sirloin, thinly sliced
- 1/4 cup of soy sauce
- 2 tablespoons of sesame oil
- 2 tablespoons of brown sugar
- 2 cloves of garlic, minced
- 1 tablespoon of grated ginger
- 1 tablespoon of gochujang (Korean chili paste)
- 4 large flour tortillas
- 1 cup of cooked rice
- 1 cup of kimchi
- 1/2 cup of shredded carrots
- 1/2 cup of sliced cucumber
- 1/4 cup of chopped green onions
- 1 tablespoon of sesame seeds
- 1 tablespoon of vegetable oil
- Salt to taste
Korean BBQ Burrito Instructions
- In a medium bowl, whisk together the soy sauce, sesame oil, brown sugar, garlic, ginger, and gochujang until smooth and well combined.
- Add the sliced beef to the bowl and toss until every piece is coated in the marinade.
- Cover and let it marinate for at least 15 minutes. For even more flavor, you can marinate it in the refrigerator for up to 2 hours.
- Heat a grill pan or skillet over medium-high heat and add the vegetable oil.
- Once the pan is hot, cook the beef in batches for 5 minutes per side, or until fully cooked and lightly caramelized around the edges.
- Transfer the cooked beef to a plate and set aside.
- Warm the flour tortillas so they are easier to fold. You can heat them in a dry skillet over low heat or wrap them in damp paper towels and microwave them for 20 seconds.
- Lay one warm tortilla flat on a clean surface and spoon 1/4 cup of cooked rice into the center.
- Top the rice with one portion of the cooked beef, 1/4 cup of chopped kimchi, a handful of shredded carrots, and a few cucumber slices. Finish with green onions and a sprinkle of sesame seeds.
- Fold the sides of the tortilla inward, then roll it up tightly from the bottom to form a burrito.
- Repeat with the remaining tortillas and filling.
- For a crisp finish, heat a clean skillet over medium heat. Place each burrito seam-side down in the skillet and cook for 3 minutes, until golden and lightly crispy.
