  • 2 tablespoons of milk
  • 1 cup of ricotta cheese
  • 1/4 cup of powdered sugar

Fried Sweet Ravioli Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, and salt. Toss in the chilled butter cubes and rub them into the dry ingredients with your fingertips until the mixture looks like coarse crumbs.
  2. In a separate small bowl, beat one egg with the milk, then pour it into the flour mixture. Stir until a dough forms; if it feels dry, add milk a teaspoon at a time until it comes together.
  3. Split the dough in half, wrap each piece in plastic, and chill for 30 minutes.

  6. Place a teaspoon of the ricotta filling in the center of each circle.
  7. Beat the remaining egg and brush it around the edges.
  8. Fold each circle in half to make a half‑moon, then press the edges with a fork to seal.
  9. Heat roughly 2 inches of vegetable oil in a deep skillet over medium heat until it reaches 350 °F, checking with a kitchen thermometer.
  10. Gently lower a few ravioli into the oil and fry for 3 minutes per side, or until golden brown. Remove with a slotted spoon and let drain on a paper‑towel‑lined tray.
  11. Repeat with the remaining ravioli.
  12. Once all are fried, dust them lightly with powdered sugar before serving.
