Where Our Lemon Yogurt Couscous Cake Came From

lemon yogurt couscous cake

When at school, I used to whip up this easy and healthy lemon yogurt couscous cake all the time. It’s moist, filling, and tart without being too sweet. It’s a great recipe for people who have trouble eating flour or gluten. The couscous acts as a binding ingredient like flour normally would. Any couscous brand or type will do for this recipe as long as it is plain couscous that you have to cook at home.

The real trick to this recipe is patience. You don’t want to over mix your batter because that could lead it to become dense. You also want to ensure you do not scramble the egg in the warm couscous mixture. Lastly, be patient as it cooks because it will need a bit of extra time since the ingredients are quite dense.

Can I Tweak the Recipe?

Yes, of course. This lemon yogurt couscous cake happens to be my favorite, but you can absolutely tweak the ingredients to your preferences. If you need a good recipe to make your own lemon curd, we have a great one here.

An example of variation includes a different kind of curd like a fruity jam. Or, if you prefer chocolate or vanilla over lemon, you can certain make the cake with that flavor of yogurt and add in chocolate powder. The important part to remember is that the cake should be moist, so don’t skip on the yogurt. If using vanilla or chocolate, milk can be a perfect substitute for lemon juice.
