Easy No-Churn Ice Cream Recipes: 3 Unique Flavor Combinations

STEP 1:

Before starting, make sure to prepare your equipment. Place a mixing bowl and beaters or whisk attachment in the freezer for about 15-20 minutes.

Once they’re chilled, take them out and pour the heavy cream into the bowl. Beat or whisk on medium-high speed until stiff peaks form, meaning the cream should hold its shape when you lift the beaters/whisk out of it.

In a separate bowl, combine the sweetened condensed milk and vanilla extract. Mix well until the mixture is smooth.

Next, gently fold the whipped cream into the sweetened condensed milk mixture. Use a spatula to combine the two mixtures while keeping the airiness of the whipped cream. Add a pinch of salt to the mixture and gently fold it in to enhance the overall flavor of the no-churn ice cream.

Now, we are going to divide the no-churn ice cream base into three bowls.

Our first bowl is going to be our Ube Salted Caramel Ice Cream. Mix ½ teaspoon of ube extract into the first bowl. Set aside.

Next, we are going to make our Ube Caramel. Heat the sugar in a saucepan until melted and amber. Add butter, stir until smooth and combined. Slowly pour in heavy cream, stirring. Boil for 1-2 minutes, stirring constantly. Remove from heat, add vanilla, salt, and ½ tsp ube extract. Allow caramel to cool.

When pouring the Ube Salted Caramel into pints, be sure to layer the ice cream with the caramel swirl.

STEP 9:

Our next bowl is going to be our Classic Cookies and Cream Ice Cream. First, food process or crush some Oreos as a mix-in. Fold crushed Oreos into the second bowl. Set aside. 

STEP 10:

This Classic Cookies and Cream flavor can go directly into pints.

Our final bowl is going to be our Blackberry Fudge Ice Cream. First, we are going to blend up the blackberries with an immersion blender. Then, cook this mixture over medium heat until thick and jammy. Allow to cool and set aside. Chop up the dark chocolate bar into smaller pieces. In bowl three, fold together the ice cream base, chocolate pieces, and blackberry jam.

Once everything is combined, pour the ice cream mixtures into containers. Smooth the top with a spatula and cover the container with plastic wrap or an airtight lid to prevent ice crystals from forming.

Place the container in the freezer for at least 6 hours or until the no-churn ice cream is firm. Once the ice cream is frozen and ready to serve, scoop it into bowls or cones and enjoy your no-churn ice cream!
