Queso Fundido Ingredients
- 1 tablespoon of olive oil
- 1/2 pound of Mexican chorizo, casing removed
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1/2 cup of roasted poblano peppers, sliced
- 2 cups of shredded Oaxaca or mozzarella cheese
- 1 tablespoon of chopped cilantro
- Salt and pepper to taste
- Tortillas or tortilla chips, for serving
Queso Fundido Instructions
- Heat a small cast iron skillet over medium heat.
- Add the chorizo and cook for 5 minutes, breaking it up and cook until browned.
- Spoon off excess grease if there’s a lot. Leave about a tablespoon in the pan for flavor.
- Add onion and jalapeño. Cook for 3 minutes until softened.
- Lower the heat and spread the shredded cheese evenly over the mixture.
- Cover and cook for 5 minutes, until the cheese is fully melted and bubbling at the edges.
- Turn off the heat and top with cilantro.
- Serve immediately with warm tortillas, chips, or fries.
