Queso Fundido Ingredients

  • 1 tablespoon of olive oil
  • 1/2 pound of Mexican chorizo, casing removed
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 cup of roasted poblano peppers, sliced
  • 2 cups of shredded Oaxaca or mozzarella cheese
  • 1 tablespoon of chopped cilantro
  • Salt and pepper to taste
  • Tortillas or tortilla chips, for serving

Queso Fundido Instructions

  1. Heat a small cast iron skillet over medium heat.
  2. Add the chorizo and cook for 5 minutes, breaking it up and cook until browned.
  3. Spoon off excess grease if there’s a lot. Leave about a tablespoon in the pan for flavor.
  4. Add onion and jalapeño. Cook for 3 minutes until softened.
  5. Lower the heat and spread the shredded cheese evenly over the mixture.
  6. Cover and cook for 5 minutes, until the cheese is fully melted and bubbling at the edges.
  7. Turn off the heat and top with cilantro.
  8. Serve immediately with warm tortillas, chips, or fries.
